You can see what's available by searching for the titles you're interested in, and seeing what comes with the yellow plus icon. I've only looked for god of war 1 and 2 and final fantasy 7 and x since getting the service, and they've all looked/run great. I know they have old Syphon Filter games. Not sure about old MGS.

I find that a lot of those games are fueled by nostalgia almost exclusively. I have a perfectly legal collection of the entire SNES catalogue, and several games for Project 64 and vast majority just aren't as good as I remember.
MGS is probably the exception to that, I suppose. Those games were so far ahead of their time, especially MGS3.

Snake Eater is a definite classic, that is very deserving of a remaster so more gamers can experience it. I have especially fond memories of Metal Gear 2: Snake's Revenge from the NES days. That was another game that was ahead of it's time given the depth of the inventory management and cool gadgetry.
Edit: I did some searching around and discovered there is an HD edition of the Metal Gear Solid games for PS3. It's time to dust of the PS3 so I can experience Snake Eater in HD.

Survival games are all the rage these days (Subnautica, The Forest, Valheim, etc.) but Snake Eater was the first game I remember where survival elements were prevalent. There were also just so many cool aspects, like Psycho Mantis in MGS where you had to physically plug your controller into the other port so he couldn't read your mind, or The End in MGS3 that will die of old age if you take a long break while fighting him. Kojima's imagination is legendary, and yeah, it leads to some stinkers like poop and piss grenades in Death Stranding, the apocalypse UPS simulator, but some of the things he came up with were just unbelievable.
Death Stranding was a game I had 0 interest in when it first released. Decided to try out the definitive edition for PS5, and it turned out to be a surprisingly good game. Convoluted story of course but still a fun experience.
Say what you will of Kojima, but he definitely tries to push boundaries and bring his wacky ideas to life. DS was a very unique experience.
I had to take second crack at Death Stranding to make it through the game. I found once you make it to the snowy mountains area and acquire better gear for traversing the terrain that the game really came to life. Before that point I found I was becoming increasingly bored/fed up with the game as the vehicles struggled to really go anywhere and it was a total slog to climb through hilly/mountainous terrain on foot.
The key is building your own zip line network once that becomes available. I had a good time mapping out and building ziplines between all the main camps, makes doing the deliveries super easy. Didn’t bother with too many side missions unless I was going in that direction already.
If you have nothing else to play, then maybe give it a second shot.
But God of War Ragnarok is releasing in a couple days so that should take precedence lol
Star Wars Squadrons is available free on EPIC this week.

I'm taking a RDR2 break and playing some PS5 games. Beat Ratchet and Clank Rift Apart which I enjoyed, played Plague Tale 1 which was a banger and I want to play the sequel but I'll wait until a sale. I started Horizon 2 and am enjoying it so far. I think now that I'm a dad I enjoy console gaming more than PC gaming.

I'm enjoying it. If you liked the first you'll like the second. Story so far is a nice continuation.
